This list never ceases to amaze me, A thread on omelettes :-), while I
don't profess to be an expert, my fondest omelette memories were those I
ate in a BT canteen around the early 80's they used the grill and fold
technique and it worked very very well.
As for easy over I am with Andrew on the attractiveness, I loved it when
they were cooked in deep steak fat and a spoon used to cover the top
with fat, unfortunately in my "low fat" world, I haven't had one of
these for many years.
