It is my standard way of shooting using my Canon 5D which has an RGB histogram. It's very rare to discover that I have an apparently blown highlight that can't be recovered in raw processing. I do sometimes get surprised by (usually) the red channel but not often. If I suspect trouble I'll back off a bit. The image preview also provides flashies to warn of blown highlights. Shooting JPEG could be more of a problem but that would simply call for a bit more caution.
