Chuck,
I would assume that the display is based on an embedded JPG within the
ORF file, so you are right in that you are not looking at the actual raw
data, but there is no conversion being done in order to open the file in
the editor. The editor may create the JPG file used for display, but I
don't believe that is the case. You convert the file when you are done
editing. As far as I know, this is how most raw editors work - while you
are working with a raw file, and the display is based on a JPG file.
