Moose speaks truth. Without getting into yet one more completely OT thread
(actually I love these OT threads <g>) I'd simply recommend the books of
Diana Kennedy to anyone with interest in the various regional cuisines of
Mexico. There's much to learn, she's a terrific writer, and she is moreover
dedicated to these histories (which is how I view her works).
Plus it all tastes great!
