As we converse, I'm finishing up a small wheel of Villagret Cheese from
the Ag Dept. of Mississippi State University. My sister sends me one
every Christmas. They were teaching cheese-making and selling it from
the Dairy Products Store since before I enrolled in the Fall of 1947.

When I was growing up in the South in the 1930s and 40s, every little
store had a round wheel of cheddar that we called "hoop cheese",
because it came to the store in a round wooden box. It made much
better mac and cheese than today's products, because it would brown
nicely on top. I miss it.
Readily available on-line.
I grew up with 5# bricks of unlabeled cheddar. Wrapped in cheesecloth,
then wax coated. I don't know where my dad got it, but don't much
care, what with the amazing variety of cheeses available, from very
simple to too darn fancy. ;-)
