The answer is no, unfortunately.
The reason is that every note played by every instrument contains the base
note AND a lot of harmonics, so this hypotetically software (a
deconvolution
software) would write a lot of notes for every single note played.
In fact, the quantity and weight of the harmonics make the sound of an
instrument, thus differentiating (for example) a piano and a violin
playing
the same tune.
The only audio file that contains info about notes and instruments is
midi.
When played a midi file recreate the instrument based on synthetized
tunes.
You can easily create music sheets using a midi keyboard.
