I add a "secret ingredient" after alcohol fermentation to aid malo-lactic
fermentation. Should result in a smoother, buttery flavour at cost of some
cloudiness. Contest judges and ordinary consumers don't like cloudiness, but
many connoisseurs seem to prefer it. I refuse to chemically remove it.
Some of this is destined for a still -- for motor fuel use, of course, which is
legal.

That may be true in the real world, but within the North American Unreality
Field, "cider" is legally defined as un-filtered apple juice, sans alcohol.
