Provolone, but from Wisconsin, not Italia. The Pecorino Romano and
Parmesano Reggiano I use are Italian and the feta Greek. But food is
about the proper balance of taste and texture, and that provolone works
for me in my sandwiches. The real Italian stuff isn't quite right for
the purpose.
A few weeks ago, I was out of any soft cheese but a lovely bit of
Cotswold Double Gloucester. Not bad in the sandwich, but only thin
shavings or I wouldn't have tasted anything else. :-)
