Took me a while to work this one out after I noticed that I did not
need to do handstands in the shower the day after a good hot Sri
Lankan restaurant meal but I might if I'd had a home cooked version,
even a less violent one.
I came to the conclusion that if the spices are cooked long and slow
with everything else, then no gastro-intestinal revolt or reheat/
afterburner effect was evident. However, if one added dried chillies,
paste, powder, etc. toward the end or did a quick fry-up-and-get-it-
down-your-neck after work then pain and tears was your lot.
Slow food - it's the only way.
