Also, stainless steel work-hardens. I.E. rubbing it hardens the surface, so
that when you are machining it, if the cut is not continuous and clean, the
surface being cut, hardens.
For this reason, when using a centre-punch to start a drill-hole in stainless,
don't use a round centre-punch - if you do you have already hardened the
hole. Grind a punch to make a triangular (upside-down) pyramid and you will
find the hole begins a whole lot easier.
