I think that some times we get so involved with the auto this and that, that
we
forget the basics. Use manual.
Read on the spot you want, set the exposure and recompose.
It is fast and acurate.

That's two ways of locking the exposure without wasting film and if it
wasn't for
the off-composition requirement you would have three ways to lock the
exposure.
