Older processes used glue, like what we used in the olden days. Easily loosened
easily by water, but unaffected by heat. Modern bottling uses a form of hot
glue, so hot water will work well. so for your bottle of Chateau Margaux use
water, for your two buck chuck, use heat.

This technique often works ok for new labels, but not all, especially on an
older bottle of wine.
