Hugin. Defaults work pretty well. I've only begun to scratch the surface of what it can do. As with any powerful software there is a learning curve. Enblend works so well that I shoot in aperture priority mode and let the software sort it out. Before, using manual exposure I tended to clip either the shadows or more likely the highlights. Hugin allows you to adjust the exposure before the final stich.
