None of the stuff in this thread is new. All old tech in the food industry.
These methods lower costs. If you wonder how [fill in name of restaurant chain]
can possibly sell their food, already
prepared, for less than the ingredients cost at your supermarket, this is part
of the explanation.
That it allows many of the poor to eat high quality protein, at least if they
choose to, seems to me to be a good thing.
That others can easily buy meats that have been handled/processed in other ways
is good too.
If you pay attention there is a wide range of choice.
