Ah, Shindlers!
Any editing program that allows you to work in layers is a great way
to go for this kind of editing. One easy method is the following:
1. Duplicate layers
2. Take the top layer and convert to B&W
3. Use the erase tool (brush) to paint erasures on the B&W layer.
As you erase the B&W layer you reveal the color layer from underneath.
Another technique, which you might want to use is the hand-tinting
method. Again, work on layers and paint using the eraser to reveal the
tinted layer underneath.
