I don't know what Macs can do either but since they're now on Intel
hardware and Intel hardware has for a long time had the capability of
virtualization I should think it possible to run multiple versions of
Mac OS simultaneously. Whether they allow that or not is a different
question.
My old boss at IBM tried to get Intel to virtualize even the 386 and we
would have helped them do it but they didn't seem capable of
understanding the advantages. Software folks they were not.
