The trouble with that definition, IMO, is that it's quite wrong.
Political Correctness, usually with the adjunct "gone mad", is a
label used by right-wing thinkers and commentators to ridicule and,
usually, blow up out of all proportion anything said, written or done
by those they perceive to be a delusional, illogical, liberal
minority. It is this lampooning in which the unscrupulous mainstream
media is deliriously complicit, not the "political correctness"
itself. For example, the great "Birmingham City Council renames
Christmas so as not to offend religious minorities" hoax of a few
years ago

Note that said council set up Christmas decorations etc which would
have been organised and budgeted long before the story broke.
