I have already written a lot of theory in an essay tonight on 8 bit RAW
vs. 8 bit JPEG. :-) Here, I want to talk about experience, rather
than theory, in processing 8 bit JPEGs.
I have found that doing the same edits in a 8 bit file and in the same
file converted to 16 bit and then back to 8 bit after editing give quite
different results.
When I forget to convert, things will sometimes go fine. Other times,
I'll be working along and suddenly the image looks really weird. Go
back, start over in 16 bit and that doesn't happen.
