Why not go Windows and put together your own system, eg

Any video board which supports true colour - 32-bit or better - should be fine.
You don't need
game speed for stills.
You should also carefully consider what monitor you will use if you want it to
look like the prints
you make. CRTs are still the best cheap choice. Faithful LCDs are expensive.
