It doesn't sound like you will have time to walk even part way up
towards Angels landing and it might be too cold. Probably best bet
would be to go as far up the canyon road as you can either in your own
car or the shuttle. If there are waterfalls coming off the cliffs that
can be very nice. Even a short walk up from the road to the tourist
spots can give a nice view of the canyon.
As you go out of the park on the south east side there are some nice
areas - checkerboard mesa?. The rocks might be under snow though.
