I cook it for 20 hours at 210 (more like sweating than cooking) The result is meat which falls off the bone and is then pulled apart with two forks into smaller pieces. The above link is for cooker which is very efficient at holding a constant temp. for a long period of time using little fuel (lump charcoal only). OM content - I will never give up my OM2n or my Egg -and you can just forget the rumours of digital bbq.
