I wonder is keeping one of those wine savers that spray nitrogen into
the developer a possible solution or would the nitrogen affect the
developer?

I've had exceptional results with 2-Liter (Litre) pop bottles.
Use a funnel to poor the developer in, squeeze till the the
liquid is at the top and screw the cap back on. If I'm feeling
grumpy I'll put a piece of plastic wrap under the cap. For
non-squeeze bottles, you can spray a couple seconds worth of
Dust-Off into the bottle before capping.
Oh, my bottles are exceptionally labeled to not be mistaken for
pop.
