There are more than two hundred different varieties of tamales. In the south
east of México they are rolled in banana leaves.
I will someday taste the Texas variety.

I was surprised to learn this year, that Cuban varieties of tamales are not
rolled in corn leaves but in something impermeable that gives them an
entirely different texture and composition when eaten.
