The full implementation of the Zone system includes manipulating B&W developer
selection, time, temperature, agitation, & wind speed. What you're doing is
attempting to use the full tonal scale of the neg to just barely capture all of
the tones in the original scene.
In color, you can't control any of those things. What you can do is a partial
implementation like meter from a grey card, take a spot reading from a
highlight and "Put" it on the correct zone. As a friend of mine often said,
"It beats a blank."
