I have some of the same trouble. I have to look carefully through the
viewfinder and adjust to the angle with lenses wider than 28mm. I think
I'm starting to know where to look, as in "I think there is a wide angle
shot there that I may like.", but I still have to look through the lens
to see it. I don't visualize them in my head (yet?).
It's funny, sombody posted a while ago about having trouble seeing shots
for the 300mm lens. I 'see' 200-500mm shots everywhere. I also 'see'
macro/close-up shots everywhere, which are the visual angle equivalent
to long lens shots. I won't be surprised if my TOPE Landscape is taken
with 100, 200mm or more.
