When you posted the Wisner URL I thought for certain you were lusting after
the 20x24! Think about the SUV you'd need to use as a dedicated camera bag
for it (requires a luggage rack for the tripod).
Approximate 8x10 film prices from B&H in NYC (in USD; Dec. 2001 dead tree
catalog):
Tri-X: ~$2.25 per sheet
Portra 160: ~$6.75 per sheet
E100S: ~$7.50 per sheet
E100VS: ~$7.70 per sheet
Astia: ~$7.40 per sheet
Provia 100F: ~$7.50 per sheet
Velvia: ~$7.60 per sheet

The "per sheet" costs were derived using prices for 10, 25, and 50 sheet
boxes. There's nearly zero price break buying it in bulk, just a broken
bank account. At these prices, understanding the zone system thoroughly
and using its concepts carefully for centering the film latitude where you
want it is a very good suggestion!
More seriously, if you're interested in using a pinhole with 8x10 sheet
film, then Tri-X and working with B/W is at least one-third the cost of
color (negative or transparency).
