Hi, Nicola --
The auto circuit of the OM-10 controls the shutter speed using the light
reflected off the film into the sensor below the mirror. If there's no
film, the only light the sensor will "see" is that which is reflected
off the shiny black pressure plate. In other words, it won't see much
light at all, and consequently the shutter will stay open longer than it
would when you are actually taking a photo.
The meter display in the finder is an indicator only -- it does not
control anything at all! It will indicate the _approximate_ shutter
speed the camera "should" choose, but assumes that there's film in the
camera and a lens attached.
