Well, the process that Giles described for the production of out
of focus highlights is straightforward convolution of a clear image
of the objects in front of the camera with the image of the aperture
on the film -- that is, a tiny point takes the shape of the aperture's
image.
So we could take a few entirely in-focus images (either photographs
shot at f/16 and infinity focus, or synthetically-created images such
as cartoons/paintings or ray-traced images) and filter them with various
aperture shapes. Put these on a web page and have people click on
the ones they find pleasing and generate statistics from that...
