I've been sharing some of our Bokeh information on the FD (Canon) list, where
they had the same question at the same time. Here is a fine response to one
of my postings:

I can tell you a little bit about the word bokeh everyone seems to
wonder at since I'm from Japan! Although 'boke' is sometimes written in
kata-kana, it is NOT imported from French or any other languages (same
is true for some other native japanese words). Perhaps 'boke' in
photographic term (out-of-focus, blur) is written in kata-kana to
distinguish from other meanings of the word.
The 'h' at the end of the word is probably added for pronunciation
purpose (to show it does not rhyme to 'poke'). Vowels in Japanese are
always consistent to its letter.
A - ah, I - ee, U - oo, E - eh, O - oh
I say 'bow-kay' is acceptable
"read and lead", "hat and hut", and "flow and flaw", all pronounced the
same in japanese. Sometimes even "she and see" or "G and Z".
