Note that my Grandma’s recipe uses smoked bacon rather than plain ham, and the
sauce involves mushrooms in a brown roux obtained by adding a little flour to
the fat together with some clear stock.
Let me know how she peels them so neatly if she agrees to share her secrets :-)
