Ken,
I don't need to take up your photo time in Alaska to teach me about
Histograms and Exposure Values. I went online and found some
informative articles, and I learned a lot. Now that I know how to bring
up the histogram after I take a trial exposure, (I'm using the E-1), I
now know which way to move the EV to zero in on a reasonable choice. Of
course, with newer gear, it can all be done live, but that takes all the
fun out of it.

over exposed. There was enough adjustment room to get close to a proper

What converter/editor are you using? Adobe Lightroom CC or other?
