Pretty mild, in comparison. But of course, I go for the darkest grade of maple
syrup I can find, and birch, being more rare, seems to only come in light.

Probably because sugar maples don’t grow there. They produce TWICE the sugar as
other trees (about 4%), and so require HALF the fuel (firewood, natgas,
whatever) to reduce. So maple syrup will continue to be cheaper.
