I've done this without reassembly -- simply put the mount on the camera, and
hold the lens tight against the mount (after cleaning it carefully, of course).
You may be introducing subtle de-centreing aberrations, but you should still be
able to see if you've got infinity.
Going "too far" is not necessarily a bad thing, either. MOST longer lenses need
to focus past infinity, due to thermal expansion/contraction concerns.
