I enjoyed these as well as the making of the paella (link at end). I
know of paella but have never eaten it. I found this Wiki link a nice

I was surprised to see the pine branches and cones in the fire. This
will certainly burn hot but, according to the wiki article, the flavor
infused by the smoke is important to the taste of the paella.
