By far the best solution is to use its proper name: Mothering Sunday.
The "mother" connection is, after all, a reference to the 'Mother Church', not
to humans in general or humans who have had offspring in particular. Mothers
have just become associated with the celebration because they have a not
dissimilar duty to bring up their children within the church. Many of the more
traditional women churchgoers get very annoyed by the transfer of celebration
to 'Mothers' Day'; where the apostrophe appears is the least of their concerns.
