Well, it was bound to happen, with all that care to avoid blowing highlights.
In flat light, you've underexposed, so
that the histogram doesn't go to the top. :-)
Use Levels to bring the histogram up to the top, and it's far more interesting
looking. A touch of Highlights and Curves
doesn't hurt, either.
