Don't believe I've had wild boar sausage. I did have the meat again last month,
the 18th. I think, after several decades.
First time, decades ago, was in a fancy French restaurant in SF, where they
claimed to marinate it for a week. Last
month was in a far less prepossessing Greek restaurant in Brunswick, Maine. I
don't know how they prepped it, but it was
very good. No wonder they required a reservation and were packed even on a very
rainy Tuesday night.
