The method you are describing for finding the "normal" lens has nothing to
do with the human eye and all to do with the design of the viewing system of
the camera.
The image in the viewfinder of an SLR camera is formed on the focusing
screen. The eye is focused via a lens on this screen to see a clear image.
When you put a zoom lens on the camera and change the focal length to match
what the unaided eye is seeing, when you get a match what you have done is
found out the focal length of the lens that focuses the eye on the focusing
screen. This focal length depends entirely on the manufacturer and says
nothing about how the human eye sees.
