The blown-highlight shots are still OK.  Don't be so hard on yourself.
Hair-impaired scalps in bright sunlight are similar to chrome bumpers.
About the only way to eliminate the highlights there is to pat his head down
with pancake makeup.

I'm not one who is opposed to burnt highlights. Within the album they are
just fine and they are what they are.  You got the facial expressions and
the timing looks good. Those are the things that really matter.  A bright
spot on somebody's head isn't going to make or break the photo.
