We have a winner!
I cut most things on my butcher block, which has figured in several of
my posts and a TOPE, I think. Beets I cut on a white plastic board that
rinses clean in the sink.
Here's the eventual result.

I'd send you some as a prize, Bill, but I don't think it would travel
