I am successfully using two separate profiles with two monitors with
Aperture 2.0. My secondary monitor doesn't look great, but that's
because it's a nine-year-old CRT, and is slowly losing brightness. (My
20", $1,400 "palette monitor." :-)

That would be strange indeed. I don't understand how a MacPro wouldn't
handle separate monitor profiles -- sorta defeats the purpose, no?
I've been using two monitors with separate profiles for what, nearly
ten years now? I remember thinking how lovely it was in those days
when it was a struggle to get a Windows machine to show *anything* on
a second monitor, let alone something colour-accurate.
