That's actually an interesting point.
I think singular is correct.
Trouble is ... I can't really explain why. I think it's the collective
that suggests to me it should be singular.
The world seems fairly split on it, with 503 Google hits for "grocer's
apostrophe" and 252 for "grocers' apostrophe".
