I don't think that it's totally lost, AndrewF; I misunderstood you.
Because when we stay in France our first choice is normally a "single-
hearth" Logis de France; the accommodation is normally basic but the
food excellent and not dreadfully expensive.
Traditional France, especially in the countryside, will not go away
very quickly I think.
