5MP is more than enough to make a fine 11x14.

I generally think that in digital things have been changing so  
rapidly that each camera is statement about technology  when it was  
designed. The rate of change may be slowing down though. Each camera  
seems to build on the last one whether an inexpensive one or a pricey  
one. So newer is almost always better from an image point of view  
regardless of price.

I double checked the reviews for noise at dpreview and at ISO 1600  
the 8MP E-500 is a little noisier than the E-1. Each review gives a  
Canon model as a benchmark and it is disturbing if you are a high ISO  
guy that the Oly is not only a lot noisier, but a lot of detail  
disappears as well at 1600. So Canon might be your best bet, maybe  
with an adapter and Oly lenses?  Interestingly the Nikon D50 noise is  
lower than the noise from the 350D, but about the same at ISO 1600  
and it would open up a lot of lenses for you that have been designed  
for a digital sensor similar to  those for Oly.

You can always crop to 4/3.
