The following shots were taken with a digital (coolpix 4500) with
flash just by taking closeup shots of the birds as they sat on a couch
next to me / leg / table. No retouching at all, just resizing. The
secret is a small digicam flash so that it won't illuminate the
background, and thus you magically get a black backdrop. (not perfectly
black; in the "Piper" shot, you can see a bit of something in the bottom
left, but you get the idea).

Depending on how much control you have over your camera, you could try
winding the flash power down a bit, or as someone else has suggested,
tape a bit of paper over it. As for composition, it's a digital, just
keep trying until you get a shot you like! Those are picked from about
thirty shots I took trying for head closeups, and a _lot_ more general
bird shots.
