Agreed, I just took a shot at this myself and was getting some decent
results but just ran out of colour info and things started to get
posterised. 16-bit editing is essential for restoring this. I managed
to get a decent balance of the strawberries looking red, the
background looking green and the skin tones looking alright and only a
bit of colour cast in the hair but there was nothing to do about the
blown highlights at that point.
