Thanks for your responses Moose, Jez, James and Wayne.
I re-checked my settings in Vuescan and I had mistakenly set 3001 ppi
(?) as the Input resolution. I reset it to 5400, output at "Scan dpi"
and the result is much more pleasing, the grain less clumped and the
contrast easier to massage to where I want it.
I normally scan mono in RGB, and I have been using 16-bit images,
adjusting the Levels or Curves before resetting to 8-bit, then to
Greyscale. I seem to lose less information by adjusting the levels in
16-bit. Finally, I save the file as a .jp2, resize it to 700pixels
across and save a separate file for use on the Web as a .jpg.
Now, to rescan the whole roll... ;-)
