I think you may be encountering one of the limitations of slide film.
Nowhere near a pro myself, but I note portrait pros have always
preferred rather low contrast color negative film. They didn't just make
up the name 'Portra' at random for Kodak's film of that type.
You might be able to tame it with different scanner settings for those
few problem shots. It te detail is there to be captured, the excessive
contrst should yield to PS.
