Mike, I agree with you in Oaxaca food, and I am not born or live in
Oaxaca.
Its true that its hard to find hand made tortillas in the big cities but
in small cities and towns you can find them easily. Even in big cities
you can find them, certainly in scarce places. Also in a lot of
restaurants you can see how the totillas are made and from there to your
plate.

So true. While I enjoy the cuisine passed here as Mexican it bears
little resemblance to its namesake. In Mexico hot food and chili is
commonly served in conjunction with drinking large quantities of booze.
Best region for food in Mexico, IMHO Oaxaca.

Casualty of the tortilla machines. One must travel to Guatemala to hear
the early morning pat-pat-pat sound of women making tortillas. Or you
can go to a certain little restaurant in Toppenish, WA. ....
