So true. While I enjoy the cuisine passed here as Mexican it bears
little resemblance to its namesake. In Mexico hot food and chili is
commonly served in conjunction with drinking large quantities of booze.
Best region for food in Mexico, IMHO Oaxaca.

Casualty of the tortilla machines. One must travel to Guatemala to hear
the early morning pat-pat-pat sound of women making tortillas. Or you
can go to a certain little restaurant in Toppenish, WA. ....
